Last night we fired up the grill- steak, eggplant and watermelon for dinner. I only got about 5 bug bites (ugh) in the process and the meal was quite tasty!

MM handled the steak while I tried something new with watermelon. I used this recipe and while a bit time consuming to cut up a whole watermelon and attempt to “dry it”, it was really good and I’d make it again.

As for the grilled eggplant, after thinly slicing two eggplants I tossed them with olive oil, salt and pepper and threw them into this handy-dandy grilling tool (Schmidt Brothers Grill Basket from West Elm) which I highly recommend! It made grilling and flipping all these veggies a breeze, way easier than flipping each individually.

I worked up a serious sweat since it was 1,0000 degrees out- frozen grapes made for a perfect dessert!
