You’ve heard of 1-pot meals. Now let me introduce you to 1-cutting board meals! I’m still adjusting to life in my new apartment and the biggest adjustment has been dealing with a smaller and ill-equipped kitchen (no dishwasher!). To avoid doing any dishes, I present to you last night’s dinner which was prepared in 2 minutes: Turkey Avocado Roll Ups

On one cutting board cut up 1 avocado, ½ a red onion, add a pile of fresh spinach and then roll up some of each ingredient in a slice of turkey (I opted for Columbus Sliced Turkey Breast). I think in total I had 4 of these lil roll ups and half the avocado. Dessert was a handful of fresh cherries & the total clean-up time was approximately 30 seconds.

Sound like a lame dinner? Ok, it sort of is. But when I get home after an evening gym session cooking is not on my radar and quick & healthy (and no plates required) meals are the best.
