One Skillet Breakfast Hash

I’m a believer that you can put most things in a pan, fry it up and it will taste delicious. Last weekend I used whatever I had and come up with this tasty breakfast hash. You don’t need these exact ingredients, feel free to experiment with different flavors.

Ingredients:

  • 1 green apple
  • 2 handfuls of fresh spinach
  • 1 yellow onion
  • 2 chicken sausage links
  • 2 eggs
  • ½ avocado
  • Salt and pepper
  • Avocado oil

What to do: First, chop up all of your ingredients. In a pan, heat up a ½ tablespoon of avocado oil and drop in your chopped onion and begin to cook the onions down. Once they start to brown, toss in the chopped chicken sausage and continue to cook.

As the meat starts to brown, add in the apple and once the apple is starting to soften and the meat is fully cooked, toss in your spinach. Mix this around until the spinach cooks down and then push everything to one side.

If the pan isn’t still oily in the bare part, add a bit more oil then toss in your eggs. Once the egg whites go from translucent to white, flip the eggs and allow to cook for about one more minute, then remove everything from the heat.

For breakfast I had half of the hash, two eggs and half an avocado. There is a lot of hash, enough for two breakfasts.
