One of the best parts of weekends spent in NYC is the brunch scene but sometimes it’s just as fun (and more relaxing) to hang at home with a healthy home-cooked meal. It’s inevitable that when I’m out to brunch I’m going to give in and get a Bloody Mary and while I often request a side salad or fruit instead of home fries…sometimes (ok, most of the time) I can’t resist.
This weekend we were dog sitting so it was the perfect excuse to stay in with the pup for brunch. I wanted it to be more exciting than an egg white omelette, so here’s what I made:
Banana Coffee Freezie + Paleo Eggs Bennie
Ingredients for 2 Servings of the Freezie:
- 3 cups of iced coffee (brewed the night before)
- 1.5 cups unsweetened vanilla almond milk
- ½ frozen banana
- 5 ice cubes
- Generous sprinkling of cinnamon
- Splenda (1-2 packets depending on your sweet tooth)
What to do: Only 1 step, put it in a blender and mix! It will be thick and delicious. It tastes way more decadent than it actually is. Estimated calories for each glass = 74 calories. If you want lower calories and a bigger kick, use less almond milk and more coffee.
Ingredients for 2 Servings of the Eggs Bennie:
- 2 eggs
- ½ avocado
- 4 oz smoked salmon
- Truffle salt
What to do:
- Start by poaching your 2 eggs. If you want a heartier breakfast, do 4 eggs, 2 for each person. Poaching eggs is an art and we’re still working on perfecting this process. Even if it doesn’t look beautiful it will probably taste just fine.
- While that’s cooking, cut up the salmon and the place it on the plate. I got the Wild Smoked Salmon from Trader Joe’s and it wasn’t the best, a little thickly cut for my liking but not bad.
- Next slice up the avocado and place on top of the salmon
- Once the eggs are ready, immediately place on top of the avocado, sprinkle with a dash of truffle salt and eat it asap!
