PB & Choco Chip Double Layer Cookie Cake Recipe

I mentioned earlier I made a deeeelicious cookie cake for my friend’s birthday. I adapted the recipe from Erica’s Sweet Tooth and put my own twist on it. Since I was bringing this to a party I decided not to skimp on the real ingredients. Typically I’d use Splenda instead of regular sugar, some applesauce instead of all the butter and egg whites instead of eggs but sometimes you just gotta go for the full-fat version. So here you go, a pretty easy recipe with very tasty results:

Peanut Butter & Chocolate Chip Double Layer Cookie Cake with  Buttercream Frosting

CAKE:

12 tbsp butter
1 cup light brown sugar
½ cup sugar
2 eggs
3 tsp Kahlua (or Vanilla, I just happened to be out)
3 cups flour
1 tsp baking soda
1 tsp salt
3 cups semi-sweet chocolate chips
1 spoonful peanut butter

  • Preheat oven to 350 degrees
  • Beat together butter, brown sugar, and sugar until fluffy
  • Add egg and vanilla and mix until smooth
  • In a separate bowl, mix flours, baking soda, and salt
  • Slowly add the dry mixture to the wet until well incorporated
  • Add chocolate chips
  • Remove half the batter and evenly spread on a greased 9-inch round baking pan
  • Add 1 spoonful of peanut butter to the remaining batter and put this in a second greased 9-inch round baking pan
  • Bake for 18-20 minutes
  • Transfer to a wire rack and let cool

Now the FROSTING:

½ cup unsalted butter, softened
6 to 8 cups confections sugar
¼ cup Almond Milk
2 teaspoon Kahlua (again, still out of Vanilla)

  • Place the butter in a large mixing bowl and slowly add in the sugar, about 2 cups at a time
  • Beat until smooth and creamy
  • Add in the ¼ cup Almond Milk (or skim milk) and continue to blend
  • Add in the Kahlua
  • Continue to blend until soft and fluffy.
  • If the icing is not a good consistency and doesn’t spread well, add more sugar

Once all that is done and your giant cookies have cooled (f you don’t wait until the cookies have cooled your frosting will melt everywhere and make a mess), remove them from the pans and put one of the cookies on a plate. Top that cookie with a big heaping of frosting (add sprinkles if you wish) and then put the other cookie on top. Now frost the top cookie to your liking.

Eat it up and enjoy!
