This week at Trader Joe’s I was on the hunt for Brussels Sprouts but unfortunately they were out. Instead, they did have a bag of shredded Brussels Sprouts which seemed like a good alternative, except that I had no idea what to do with them. After a quick search online I came across the perfect recipe which just so happened to include all ingredients that I had in my fridge. Shredded Brussels Sprouts with Shallots and Butternut Squash was easy to make and turned out to be delicious and filling. Even MM who is not a Brussels Sprouts fan enjoyed it and asked for seconds.
Here is the ingredient list, all of which you can purchased pre-cut & ready to go at Trader Joe’s, making this a very easy to prepare dish:
- 1 lb Brussels Sprouts
- 1 small butternut squash
- 2 large shallots (so it would be like 4 pieces of large shallot since they come 2 per shallot)
- 3 Tbsp olive oil, divided
- 2 Tbsp balsamic vinegar
- 2 tsp salt, divided, plus more to taste
- 1 tsp pepper, divided
- Parmesan cheese, optional
My only edit to the recipe was that I added a half cup of corn and instead of just using shallots, I used a pre-cut mix from TJs of shallots, onion & garlic.
