I can’t believe it’s already the middle of August, meaning that Labor Day and the conclusion of summer is right around the corner. If you’re looking to take advantage of what’s left of summer, throw a little shindig with these two recipes, Watermelon and Feta Salad and Double Berry Trifle. These light recipes won’t expand your waist line and are perfect for the summertime.
Watermelon and Feta Salad

Double Berry Trifle:
- Ingredients:
- 2 Cups Strawberries, sliced
- 2 Cups Blueberries
- 1 Box Angel Food Cake
- 1 Cup Fat Free Greek Yogurt mixed with 1 packet Splenda
- 3 Cups of Fat Free Cool Whip
- Directions:
- The above ingredients all make up various layers to your trifle.
- Start with ½ of the Angel food cake, cut up in cubes and layer the bottom of your trifle bowl
- On top of that, add ½ the Greek Yogurt mixture
- Then add ½ your berries
- Next add ½ the Fat Free Cool Whip
- Continue to layer the items as you like until you’ve created your multi-layer trifle
- Serve chlled
