I’ve posted about the miracle product “Shiratake Noodles” before, and last night MM put together a lovely guilt-free meal, featuring the ultra low-calorie noodle imposter.
Ingredients:
- 4 bags of Shiratake Noodles
- 3 cups of already cooked shrimp
- 1 large head of broccoli, steamed and cut up
- 2 mangoes, cut up
- 1 can of water chestnuts
- Fresh coriander from the garden, finely chopped
- A dash of salt
- A dash of pepper
- Light Raspberry Walnut Vinaigrette Dressing
Directions:
- Put all the noodles into a strainer, wash well with water and pat dry with a paper towel
- Toss the noodles, shrimp, mango, coriander, water chestnuts and broccoli into a large bowl, top with ½ cup dressing, salt and pepper
- Serve cold
This recipe served up dinner and lunch for two people. I predict that the entire recipe contains approximately 800 calories. Considering that counted for 4 meals, that’s crazy, right? Try it out and let me know what you think!
