Guilt Free “Pasta” for Dinner

I’ve posted about the miracle product “Shiratake Noodles” before, and last night MM put together a lovely guilt-free meal, featuring the ultra low-calorie noodle imposter.

Ingredients:

  • 4 bags of Shiratake Noodles
  • 3 cups of already cooked shrimp
  • 1 large head of broccoli, steamed and cut up
  • 2 mangoes, cut up
  • 1 can of water chestnuts
  • Fresh coriander from the garden, finely chopped
  • A dash of salt
  • A dash of pepper
  • Light Raspberry Walnut Vinaigrette Dressing

Directions:

  • Put all the noodles into a strainer, wash well with water and pat dry with a paper towel
  • Toss the noodles, shrimp, mango, coriander, water chestnuts and broccoli into a large bowl, top with ½ cup dressing, salt and pepper
  • Serve cold

This recipe served up dinner and lunch for two people. I predict that the entire recipe contains approximately 800 calories. Considering that counted for 4 meals, that’s crazy, right? Try it out and let me know what you think!
