I’m a huge fan of Chia Seed Pudding but sometimes the taste is a bit bland. To up the flavor, try this fruity version:
Ingredients:
- 1 ripe banana
- 1/3 cup fresh or frozen blueberries
- Unsweetened Vanilla Almond Milk
- The Chia Co Chia Seeds
What to do:
- In a blender, liquify the banana, blueberries and 1/3 cup of almond milk.
- Pour the mixture into mason jars. I used 3 6oz jars and 1 larger jar, about 12 oz.
- Add more almond milk to the jars, leaving about 1 oz empty at the top (just enough room for your chia seeds)
- Add the chia seeds, about 1.5 tablespoons for the small jars and 2-3 tablespoons for the larger jar.
- Give the jars a good shake and place in the fridge. In 15 mins, give them another shake to make sure the seeds haven’t clumped or settled to the bottom. If they have and shaking doesn’t help, use a fork to mix up the ingredients.
- In about 2 hours your pudding should have solidified and is ready for eating. I make this at night and have it for breakfast the next day.
I loved how the fruit gives an extra nutritional level to the pudding, plus a little sweetness. I’m looking forward to trying new versions and will keep you posted on how they turn out. Up next on my list to try: pineapple coconut and raspberry cocoa.
