Is there anything more exciting than cutting into a fresh watermelon, especially after a hot day in the sun? And is there anything worse than taking the first bite and realizing the crisp deliciousness you were expecting is mushy and mealy? The worst, right? This happened to me last weekend and it was a serious disappointment, but instead of tossing the watermelon, I scooped it up, threw it in a blender and made fresh watermelon juice. DELISH.
If you find yourself stuck with a lemon of a watermelon on your hands, have no fear, you can salvage the fruit and make an ultra-hydrating juice.
First I simply blended the watermelon until it was as smooth as it was going to get and took a big gulp. Very tasty but also very sweet and a big concentration of calories.
To lighten the caloric load and to serve more people , I then added a bit of water, ice cubes and to give it a little something extra, fresh mint. I once again blended until smooth and the result gets an A+.
