Crock Pot Pumpkin Chili

As the temps drop, my crock pot use is going to exponentially increase. Not only is it super easy, it also happens to make the best soups and chilies that you can make on a Sunday and feast off of for days to come. Here’s my latest recipe, Turkey & Beef Pumpkin Chili

Ingredients: 

  • 1 pound lean ground turkey
  • 1 pound lean ground beef
  • 2 cans diced tomatoes
  • 1 can pumpkin puree
  • ½ tablespoon chopped garlic
  • 2 yellow onions, chopped
  • 2 sweet potatoes, chopped
  • 1 cup low sodium chicken broth
  • Generous sprinkling of cumin, cayenne, salt and pepper 

What to do:

In a pan, brown the meat, pour in a bit of chicken broth so it cooks with some extra flavor. While that’s browning, in your crock pot toss in the rest of the ingredients. Once the meat is cooked, toss it into the crock pot and put it on high for 5-7 hours.

If you’re looking for more veggies in your meal, pour the chili over spaghetti squash.

I wish I could tell you I took beautiful pictures of this meal but I didn’t, so you’ll have to use your imagination and just trust me that this is worth making!
