I’m still doing the Paleo diet (well, let’s call it Paleo-Style, because I’ve been allowing some cheats here and there) and for some meals it’s tough to figure out what to eat. I’ve found lots of options for lunch and dinner, but breakfast and snack time are more challenging. Here are my recommendations for anyone else have a similar struggle:
Breakfast:
- Hardboiled Eggs
- Egg White Veggie Omlette
- Egg White Veggie Frittata
- Green Power Smoothie
- Egg “Muffins”
- Fruit…lots of fruit
Snacks:
- Apple or Banana w/ Almond Butter
- Avocado with Sunflower Seeds
- Roasted Sweet Potatoes
- Tuna Salad in a Tomato
- Dried Fruit (no sugar added) & nuts (no peanuts!)
- Vegan Banana Peanut Butter Ice Cream
- Dark Chocolate Nut Clusters
