A look at the last week in pictures!

The temps were warm for about one second, then it was back to winter-like weather in NYC. What is the deal? It’s April! I spent some time outside with Ollie when it was warm and it made me so excited for when the weather is consistently good and Ollie and I can go on long walks and hang in the park. We got Ollie in November so I haven’t experienced warm weather with a pup yet. Can’t wait, come on spring, we’re ready for you!

Hit up my fave Equinox class (aside from cycle of course), MetCon3. There’s a class a few minutes after one of my morning cycling classes making it the perfect way to get cardio and conditioning done all before 8am. Even though Wednesdays are my earliest morning, it’s one of my favorites. Waking up at 5:25am is a struggle but once I’m up it’s such a good morning.

Have you jumped on the cauliflower rice bandwagon yet? If not, what are you waiting for? I’m obsessed. I’m not going to lie to you and say it tastes just like rice but it’s close enough. This week I did cauli rice, lean ground turkey, sauteed sweet potatoes and avocado for a Paleo-friendly Mexican rice bowl.

Over the weekend MM whipped up this ridiculously amazing Paleo granola, recipe from Paleo Cupboard. Following the recipe was a bit too sweet for us so we made some adjustments are still working to make it just right. Once I have that I’ll share more with you.

This little cuddle bunny’s feelings are how I feel right about now. I’m ready for the weekend!
