Continuing on my quest to complete my 30 Things to Do Before 30 list, last night MM and I threw a dinner party! We’ve had a bunch of little dinners at our apartment over the years but I didn’t feel that they truly qualified as a “dinner party” until there were name cards and centerpieces. Last night we invited a few friends over for a Friendsgiving feast.
I’d love to throw a huge fancy dinner party but I did this one on the cheap(ish) and still think that my table looked quite good! I went for fall-themed colors with reds, yellows and oranges. We completed the table with gourds, a pumpkin and festive candles.
Our kitchen is super tiny so we made this a potluck style dinner. We cooked up a few things and then assigned out other Thanksgiving must-haves.
MM prepared a turkey in the slow cooker (recipe here) since our oven probably can’t even fit a turkey and he also made a vegan pumpkin carrot soup (a combo of Vegan Carrot Soup and Coconut Pumpkin Soup) a grilled salami and roasted potatoes. I made cornbread stuffing (THIS recipe, but instead of heavy cream I used almond milk), apple spaghetti squash pie (THIS recipe minus the sugar and only using egg whites, no yolk) and a raw vegan pumpkin pie. The stuffing and the spaghetti squash were awesome, the pumpkin pie…well it was good but you could tell it was a healthy raw version. We ate about half and I put the rest in the freezer, think it might taste good as a frozen pie, will let you know. Personally I thought it was tasty but it’s not a dessert that people are going to go crazy over, it’s a healthy take on your standard pumpkin pie.
Our guests brought aaaamazing food: carrot souffle (sounds healthy but has 3 sticks of butter, heavenly), turkey quinoa meatloaf (will get you this recipe because it was so good and healthy), garlic string beans (another recipe I’ll share) plus a bunch of desserts.
To help with dinner prep, I ordered all of our ingredients off Fresh Direct and picked up the table decorations at a nearby paper store. We went the paper plate route as our sink doesn’t even fit some of our serving dishes so anything to help with a quick clean up is key.
This past week was a little crazy as it was our first week with our new pup so planning for this dinner sort of fell by the wayside. It was stressful Sunday AM but I think we pulled off quite the feast. I’m super proud of our Friendsgiving and can check another item off my list!
