I’ve had this recipe bookmarked for months and finally decided to give it a try. I can’t believe I waited so long! Not only was it super easy and quick, it’s also tasty and nutritious (half an avocado with an egg is approx 240 calories).
After this mornings 6:15am cycling class this felt like a treat, almost like Sunday brunch (except that now I have to go to work).
Ingredients:
- 1 ripe avocado (the larger the better)
- 2 eggs
- Salt, pepper, spices of your choosing (I used cayenne pepper)
What to do:
- Preheat the oven to 425 degrees
- Slice open your avocado and remove the pit. Scoop out a bit of the avocado to make room for the egg. Save the excess avocado.
- Place the avocado in a small baking dish, if you have one that it fits in snuggly, that’s perfect. I didn’t have one so I used tin foil and wrapped extra foil around the avocado to make sure it didn’t fall over.
- Crack one egg in each avocado half. If you can, try to get the yolk in first then top off with the whites. I tried but failed so however the egg ends up in the avocado, it’s fine! Some of the whites might fall over the side, also totally fine.
- Bake between 10-15 minutes, until the whites set.
- Remove from heat and sprinkle with salt, pepper and spices of your choice. Add fruit and the extra avocado filling to the side and pour yourself a hot cup of coffee.
If you did it right, you’ll get a nice runny yolk, mmmm. Have a good morning everyone!
