New Recipe to Try: Hasselback Sweet Potatoes
Have you heard of the hasselback technique for potatoes? I hadn’t until an intriguing image came across my instagram this weekend (care of Planks Love and Guacamole). I love sweet potatoes and am always looking for new ways to prepare them (my go-to is truffle salted fries) and this hasselback situation comes out looking pretty fancy but actually seems easy to prepare. After some online searches I’ve found that this is a popular way to prepare potatoes, the outside becomes crispy and the inside stays creamy.
Sweet potatoes are full of nutrients and also happen to be very inexpensive. At Trader Joe’s I get a bag of 4-5 sweet potatoes for only a couple of bucks.
