Everything-In-Your-Kitchen Kale Salad

I came across Just A Taste’s Shredded Kale and Brussels Sprout Salad and had it in mind during my last trip to Trader Joe’s. Unfortunately, TJ’s was out of shredded Brussels sprouts and they don’t sell shredded kale. Sure, I could shred these veggies myself but who has the time for that? Ok, so last night I had no plans and I DID have the time but I was too lazy and my knife skills can be described as “eh”, so instead of closely following the recipe, I put my own twist on the salad. I used nearly every fresh fruit and vegetable in my fridge and with Just a Taste’s lemon dressing it came out better than expected. It tastes great, has a nice variety of flavors, is healthy and quite filling.

Salad Ingredients:

  • 5 cups fresh kale, chopped
  • 2 cups Brussels sprouts, each piece cut in half
  • 1 large sweet potato, chopped
  • 1 medium apple, chopped
  • 1 avocado, sliced
  • Sprinkling of pepitas, 2ish tablespoons
  • 1 package Trader Joe’s balsamic grilled chicken, sliced
  • Olive oil, salt & pepper

Dressing Ingredients:

  • 1 tablespoon minced shallots
  • 2 tablespoons Dijon mustard
  • Juice of 1 large lemon
  • 1 teaspoon honey
  • ½ cup olive oil

What to Do:

1. Lightly coat the chopped Brussels sprouts and chopped sweet potato with olive oil, salt and a pepper and place on a PAM-covered baking sheet. Place this in the oven at 400 degrees for 20-30 minutes or until vegetables soften and are slightly browned

2. While that is roasting, take the rest of your chopped up salad (kale included) ingredients and place them in a large Tupperware container.

3. Mix the dressing ingredients together until well combined (recipe is almost exactly the same as Just A Taste’s)

4. When your roasted veggies are ready, toss these into the container and pour the dressing over everything, put the top on your Tupperware and toss until well-mixed.

The above recipe is approx 4 servings. My salad was made up of whatever was available in my kitchen; even if you have a random assortment of ingredients, you can probably make something great out of it. Play around with the recipe & enjoy!
