Despite potential rain in the forecast, yesterday ended up being the perfect fall day for apple picking. I headed north with the girls for a day in Warwick, NY. Our first stop was Pennings Orchard (for apple picking & apple cider donut eating) and then we made a necessary stop at Bellvale Creamery for some delish ice cream. Apple picking is exhausting, we deserved it!
I arrived home with A LOT of apples, so now what should I do with them? I’ll be bringing them to work for a mid-day snack and will also be happy to share with my UWS friends, but what to do with the rest? I’ve been doing a little online searching for some good-lookin’ recipe and here’s what I’m considering:
- Crock-Pot Baked Apples from Skinny Chef
- Healthy Apple Crisp from Taste of Home
- Gluten/Wheat-Free Apple Pancakes
- Skinny Apple Peanut Butter Sandwich
- Baked Cinnamon Apple Chips from Design Eat Repeat
Is there anything amazing that I’m missing? What’s your favorite apple recipe?
