Sometimes, 5 minutes is the max amount of time I’m willing to put into my evening “cooking.” Take yesterady for example. After a day consisting of spin class, work, and another spin class, by the time I get home all I want to do was have dinner and lay on the couch. Here’s what I whipped up in record time:
Healthy Tuna Salad Slaw
Mix together the following ingredients:
- 3 Cans Chunk Light Tuna
- 1.5 Medium Avocados (mashed)
- 1 Spoonful Capers
- 5 Olives, Chopped
- 1 Mini Spoonful Trader Joe’s Whole Grain Dijon Mustard
Then put the mixture on top of a large serving of Trader Joe’s Broccoli Slaw
The above amount yielded about 4 servings (dinner for 2, plus slightly smaller servings for 2 lunches).
Ta-da! Dinner is served.
