This week I made my first attempt at using a slow cooker. I made Pumpkin Chili using a recipe from Sweat Pea’s Kitchen. Unlike my usual cooking, I actually followed this recipe pretty closely. The only major edit I made was instead of ground beef I used lean ground turkey. I also added some extra tomato juice on top of the 2 cups recommended and of course topped the creation with cheese (how can you not?).
The chili has good flavor, although I wouldn’t say that the pumpkin stands out. I tasted way more tomato than I did pumpkin. If I were to make this again, I’d maybe add in another half can of pumpkin because I happen to love pumpkin and wouldn’t mind if the flavor was a bit stronger.

1 pound lean ground beef
1 medium onion, chopped
1 green bell pepper, diced
1 (28 ounce) can diced tomatoes with juice
2 cups tomato juice
2 (15.25-ounce) can black beans, drained
1 (15 ounce) can pumpkin puree
2 tablespoon chili powder
2 teaspoon cumin
1 teaspoon pumpkin pie spice
½ teaspoon salt
½ teaspoon pepper
hot sauce to taste
