Last night MM and I hosted 16 friends (and 1 lil baby!) for a break fast meal. Because of the big group and our small kitchen, the dinner was pot-luck style. I knew that everyone would be bringing over tempting and delicious foods so I wanted to ensure there were some healthy options in the hopes that I wouldn’t over-indulge (let’s be real, I still over-indulged). I chose to make a healthy frittata, here is the recipe:
Ingredients:
- 1 large carton of egg whites, 2 real eggs
- 1 chopped onion
- 3 cups of fresh chopped kale
- 2 cups chopped tomatoes
- 2 handfuls of soy cheese (or any cheese of your liking)
Directions
In a large pan, saute the chopped onions in olive oil. Once slightly browned, add in the chopped kale and continue to saute until the kale has cooked down and is soft (about 5 minutes). In a bowl, beat the two eggs and add in the large carton of egg whites. Spray a large baking dish with PAM cooking spray and add in ¼ of the egg mixture. On top, add in all of the kale/onion mixture, tomatoes and soy cheese. Fill the baking dish with the rest of the egg mixture. If there is still room in the pan you can add in more egg whites. Mix everything around until it is evenly spread out. Bake at 350 degrees until the frittata is no longer watery (always takes longer than I expect, around 45 minutes to an hour). Enjoy it hot or cold, delicious both ways!
