Low-Cal Summer Cocktail

Friday night we took a delicious looking Watermelon Mojito recipe and gave it a little makeover, creating a healthier and lighter cocktail.

Ingredients:

  • 30 fresh mint leaves
  • 1 Small Watermelon
  • Rum
  • 3 Fresh Limes
  • Ice

Super easy, we cut up the watermelon and blended it with the mint leaves, lime juice, ice and rum (we didn’t measure…use your own discretion on how strong you want these). Serve the drinks nice and frosty.

The original recipe called for simple syrup (aka, sugar!), an ingredient not needed. The watermelon sweetens up the drink enough naturally. If you still want to make it sweeter, add a little splenda and leave the sugar out of it.
