Easy Dinner

Last night I put together a very simple dinner that will last me through a couple of lunches as well. Go to Trader Joe’s and grab their pre-cut Asian Vegetable Stir-Fry pack. All the hard work is done, all you need to do is toss the veggies into a pan with some PAM cooking spray and a little sauteing sauce of your choosing. Whip up a serving of quinoa as your grain and you’re good to go. Need some protein? Add tofu or grilled chicken to make the meal more filing.

I’m also recently very in love with Brussels Sprouts, which added more green to my dinner last night. I’ve been making these almost every week and continue to perfect my “recipe.” All I do is cut up Brussels Sprouts, toss them in a bowl with extra virgin olive oil, salt, pepper and garlic power, put them on a sprayed pan and leave them in the oven at 350 degrees until they look crispy. My only problem is that I’m very stingy with olive oil when I cook, and when there isn’t enough on the sprouts, they taste very bland and usually become a little burnt. However, I found a solution that gives me the nice flavor of olive oil without going overboard. Head to Bed Bath & Beyond for the Misto Olive Oil Sprayer. Genius!
