Last night after a good spin class I decided to cook dinner for me, MM and some friends. I came across a good looking recipe “Healthy Sweet Potato Skins” and although it took longer than I expected (dinner was served at 10pm, oops!), it was quite tasty, inexpensive and healthy. I recommend you try it out if you’ve got time to let the potatoes bake (that was the only time consuming step).
Here is the ingredient list, along with a few edits I made:
- 2 medium or large sweet potatoes
- 1 ½ tablespoons butter (instead of butter I used olive oil)
- 1 shallot, minced
- 1 bag fresh baby spinach
- ¼ cup light sour cream (used fat-free sour cream)
- 2 ounces light cream cheese (skipped this completely)
- 1 cup chickpeas
- ¼ cup shredded mozzarella cheese (used low-fat cheese)
- salt and pepper to taste
