Quick and Healthy Dinner

On Sunday after a weekend of too much eating, a healthy meal was in order. Here is a great find from trader joes:

  • 1 bag broccoli slaw mix
  • 2 red apples, cut up
  • 1 mango, cut up
  • A handful of chopped walnuts
  • A random mixture of balsamic vinegar + lemon juice + mustard

Mix it all together and you’ve got a tasty and low cal side to your meal!

And for the main dish, a taco salad (minus any sign of a taco…)

  • Lettuce w/ tomato, cucumber, onion
  • Topped with ground turkey
  • Sprinkle some salsa and lite cheese on top and you’re good to go
