On Sunday after a weekend of too much eating, a healthy meal was in order. Here is a great find from trader joes:
- 1 bag broccoli slaw mix
- 2 red apples, cut up
- 1 mango, cut up
- A handful of chopped walnuts
- A random mixture of balsamic vinegar + lemon juice + mustard
Mix it all together and you’ve got a tasty and low cal side to your meal!

And for the main dish, a taco salad (minus any sign of a taco…)
- Lettuce w/ tomato, cucumber, onion
- Topped with ground turkey
- Sprinkle some salsa and lite cheese on top and you’re good to go
