This time I’m for real, I’m going to have a healthy week, seriously! To get myself motivated I headed to Trader Joes and avoided the trail mix aisle (the best aisle there is in that store!).
I also made a week’s worth of very-diety soup, a recipe I received from Irene (blog, TK).
Super Simple Recipe:
Pour the following into a pot:
- Low sodium vegtable broth
- Shredded cabbage
- Red Peppers
- Onion
- Celery
- Carrots
- Can of tomatoes w/ juice
- Red pepper flakes
Keep that on the stove until veggies are soft and soup is hot. Ta-da, you’re done.

Rest of the good-for-you-groceries include veggies, tofu, egg whites, salsa, etc. Oh yea, and I also have a bag of 40 apples from apple picking on Saturday-any healthy suggestions for what do with them?
