Breakfast in a Jar: Monkey Salad to Go

When I’m not eating eggs for breakfast (which while on Whole30 is almost never) I’m probably eating a mixture (known to some as Monkey Salad) of almond butter, chopped cashews, banana and dried coconut. The most perfect time to make this concoction is when you are almost out of almond butter because the jar becomes your on-the-go vessel.

Stick with me here. Instead of using tupperware, when you’re at the very end of your almond butter (or peanut butter, whatever) jar, toss the rest of the ingredients in there and let it sit overnight. In the morning everything is all almondy and delicious, plus you don’t have to wash the tupperware, eat that breakfast and toss (recycle) it!

The one downside to this meal is that this morning I ate it at my desk and I’m at a brand new job and while I’m not sure anyone saw me eat my breakfast, it probably looks quite weird that I’m eating a jar of almond butter for breakfast…
