Breakfast on the Go: Mini Egg Muffins

I’m giving you this recipe today in hopes that you head out this weekend, load up on the necessary ingredients and bake these bad boys on Sunday. They are the perfect breakfast item to have in your fridge to help you through a busy week. These Paleo-friendly egg muffins are easy, healthy and tasty, the perfect way to start your day.

The below ingredients are what I chose to use but keep in mind you can pick your own fillers; there are tons of combinations that would work well so feel free to play around with different ingredients.

Ingredients:

  • 1.5 cartons egg whites (mine are from Trader Joes, these All Whites are good too OR use real eggs if you prefer)
  • 2 cups chopped raw kale
  • 2 pre-cooked chicken sausage links (whatever flavor/type you like)
  • 1/3 cup sun-dried tomatoes
  • 1 avocado
  • 1 chopped jalapeno
  • Olive oil, salt pepper
  • Frying pan & cupcake/muffin baking tin

What to Do:

In a large pan, use a small drop of olive oil and over medium heat cook down your kale, then toss in small slices of your pre-cooked turkey sausage and brown it slightly.

In a bowl, mix together all of your fillings, chopped into small pieces.

Add in one carton of egg whites (or whisked eggs, whatever you prefer to use) and mix.

Pour the egg and filling mixture into your PAM-sprayed tin. If there is still space for more eggs, use another carton to fill each space almost to the top. Make sure to leave a little room as these will rise slightly in the oven.

At 400 degrees, bake your eggs. This should take about 30 minutes but check in every so often and make sure they don’t burn. Use a toothpick to see if the middle is solid. If it is and the sides are slightly browned, remove them from the oven.

Let them cool for a few minutes then remove them from the baking dish. I keep these in a closed Tupperware container in the fridge for the week ahead. It’s so simple to make a weeks-worth and grab 2 of these on your way out the door each morning.

As I mentioned, these are an excellent opportunity to experiment with flavors. Other fillers that I recommend (although not all together): roasted butternut squash, sauteed onions, sauteed mushrooms, peppers, garlic, different cheeses (if you aren’t paleo), herbs, broccoli, apples and the list goes on (here’s a comprehensive list of good add-ins). Whatever you like in your eggs, toss in & enjoy!
